CARROT AND PINEAPPLE SALAD

This salad celebrates the beautiful flavors of 3 delicious and complementing ingredients – Carrots, Pineapple, and Cilantro/Corriander. Just mix ’em up! Serve! Savor!

No fuss, no muss. Just a candid and refreshing salad. This is as real as it gets. If you like carrots and pineapples, I guarantee you that you’ll be eating this salad by the bowlful.


Please find below, what perhaps is the shortest recipe ever written. This recipe serves 1-4 people depending on how much you dig the core ingredients. In my case, it serves just 1 – Me!

RECIPE

Grate 1 cup of carrots. Finely chop 3/4 cup of pineapple and 2 tbsps of coriander/cilantro. Combine. Serve chilled.

NOTES

  1. To save time, I bought those pre-cut pineapple that is available in stores. And then I finely chopped them.
  2. For best results, keep the prepped ingredients separately in the refrigerator and combine them just before serving.
  3. If the pineapple leaves any juice while chopping, reserve the juice before mixing the ingredients. Otherwise you’ll have a soggy salad on your hand. But still very delicious, just not crunchy.
